Sweetheart Crepes (GF, Dairy-Free, Refined-Sugar-Free)

I still can't believe how pink these turned out! They are legitimately bright magenta and I am so proud of that. I worked hard to bring you this recipe so just know that if I mention that fact 40+ more times. :)

(I am experimenting with artificial light photography- aka I was making this at 11:00pm and I needed to take pictures, haha. So they're not the best but they'll do).


My favorite thing about this recipe is that you can make in the night before and pop it in the fridge and make them fresh in the morning! I hope you get this recipe in time to do that tonight for Valentines day tomorrow! I was at a pop-up selling honey and so I am getting to the finishing touches on this post just now and getting it up for you!


ENJOY! Also, can you believe how beautiful the color is! It's all natural- beets to be specific!


Ingredients:



(In Food Processor or Blender)

1 cup Beets (boiled and peeled, also if you have a scale 600g is more accurate than a cup)

2 cups GF Flour Blend (We make our own, but any will do, if you're interested in it leave me a comment!)

2 Tablespoons Haws Bees Prime Blend Raw Local Honey

1/4 tsp Colima Sea Salt

3 cups Unsweetened Almond Milk

2 Tablespoons Olive Oil

1/2 cup Water

Optional: 2 Tablespoons Hemp Heart


4 Eggs


Mix all Blender ingredients in Blender or Food Processor

Move to Stand Mixer (I use the KitchenAid) and slowly whisk in eggs

Cook as you would any crepe and remember the first one is always a failure (or the first 3 in my case, haha). Sometimes it just takes a minute to get the hang of it, and get the pan at the right temperature with the right amount of grease- as with any crepe not just GF varieties.


Notes:


This is a large amount. You can always half it if you're just cooking for you and your sweetheart. These pink beauties are just as great for savory fillings as sweet so maybe you don't want to half it after all.


As I mentioned this keeps well in the fridge for a day or 2 so you can always save leftovers in liquid form so you can make extra and eat them fresh later on or make the batter the night before (my favorite way to do it).


Trent's Preferred Toppings- Coconut Cream and Frozen Fruit Roughly Blended with Maple Syrup


Brighten's Preferred Toppings- Avocado and Sautéed Portobello (where did I get such a fancy baby haha)


Alyssa's Preferred Toppings- Blue Berries, Walnuts and a little Drizzle of Mesquite Honey

P.S. Someone who stopped by the Pop-up for honey let me know that Organic, Cooked Beets are on sale right now at Costco so if you don't have a garden, or didn't plant beets this year go grab them there!! If you don't live near a Costco then cooking them from raw is super easy I just pressure cook with skin on and all, with a little water. When they come out the tough skin will pop right off!



Fancy Mushrooms and all. Haha.
