Berry Breakfast Crumble Cups

Inspired by THIS RECIPE by Wellness by Kay. I just simplified it to like a 5 minute process and 15 minute cooking time.




Here is the base of it:

  • 1 1/2 cup almond flour

  • 1/4 cup oat flour

  • 1/3 cup melted coconut oil

  • 1/4 cup pure maple syrup (you can use up to 1/3-1/2 cup if you are using a homemade fruit preserve instead of a jam or if you just like it really sweet).

  • 1 tsp vanilla extract

  • 1/4 tsp salt


Then you also need:

-1 Pint Homemade Preserves or Jarvis Jam's Honey Sweetened Jam (Our favorite for this is our blackberry preserve that is hardly sweetened, or Jarvis Jam's Honey Sweetened Raspberry which is to DIE FOR and of course she uses the most amazing quality ingredients including honey from yours truly!).

Split about 1/4 of the dough off.


Add 1/4 cup oats to that split off portion and set aside for the crumble topping.


Press the larger portion of dough mixture into the bottom of cupcake liners inside the cupcake pan.


Put a spoon full of jam of your choice into it each cup on top of the pressed down dough. Canned peaches would also be really good if you want it less sweet!... Just thought of that now so I wanted to throw that out there for those of you who can peaches each year like we do.


Crumble the oat mixture on top (doesn’t need to be evenly spread or fully covered)


Cook in preheated oven at 350 degrees for 15 minutes.


If you have a real sweet tooth or didn't put much maple syrup you can also sprinkle coconut sugar on top (which is what we ended up doing the first time since our preserves weren't that sweet. Later tests we ended up just adding more sweetener to the crumble part though and this turned out well). I just wanted to mention it because sometimes I think something is really overly sweet and then people say it's hardly sweet at all.


Just a difference in taste buds I think depending on how sweet saturated your everyday diet is.


Let cool before you pop them out so you don’t get molten lava jam on you.
